Food for Junior... and Senior

My friend Emily passed a recipe along to me several years ago and it has become a mainstay at my house. Previously, when someone would even mention the words "Chicken Pot Pie", I would start to wretch. My mind would suddenly start to reel in images of cans of Veg-All. Nothing against the manufacturer of Veg-All, but definitely not a preference of moi. That said, Emily mentioned a "phenomenally creamy and wonderful" version and I had to try it. I promise, it's probably one of the best casserole recipes I have squirreled away in my box. Here it is:

CHICKEN POT PIE
  • 2-3 chicken breasts, boiled & cubed (when working, I will sometimes just throw these --frozen-- in the crockpot with a cup of water. When they're done, they literally shred themselves)
  • 1 can chicken broth (I'm so cheap, I use 14oz of water and 2 bouillon cubes)
  • 1 16oz pkg frozen mixed veggies
  • 2 cans cream of chicken soup
  • 1/2 tsp pepper
  • ~1/8-1/4 tsp celery salt (can be omitted)
  • 1 cup self rising flour
  • 1 cup milk
  • 1 stick (1/2 cup) butter, melted (I use margarine)
Once cooked, shred/cube chicken. Combine chicken broth & veggies in pot & bring to boil. Cover, reduce heat & simmer 10 minutes. Remove from heat, stir in chicken, chicken soup, & pepper. Pour into sprayed 9x13 dish. Combine flour, milk, & melted butter. Pour over chicken mixture evenly. Bake at 350' for 1 hour, or until golden brown.

 So, Monday night, after making this for us, I dished some out for Quatro into the blender. Last time, we talked about using a blender to make baby food for your little precious. You know how some of the "stage 2" baby foods are blended up casseroles? Jackpot!
Obviously not a contestant on Iron Chef anytime soon, you can plainly see I'm not trying to impress anyone with my ability to plate an entree; however, you get the idea. :)  Even if you don't have little ones you need to make baby food for, hopefully this will be a recipe your entire family enjoys that you can add to your arsenal.

Remember, pretty soon Junior will be eating table food and right along with the rest of the family anyway. Why not blend up some of the food the rest of the family enjoys (so long as it's something simplistic that won't tear Junior's guts up) and save some money on baby food? Tootles, friends!

  1. I'm making this tonight. Of course I don't follow directions well, so I hope it turns out. We will see in another 47 minutes.

    I added a cooked potato, 1 cup sour cream and made my own cream of chicken soup.

  2. Ok so I've come back to tell you that it was delish! Of course my kids won't eat anything that is like a casserole. They don't like cream of anything soup. But Greg and I really liked it.

  3. YAAY!! I'm so glad to hear it was a hit. We love it. In fact, we're going to a gathering tonight & I'm taking it as my casserole to the potluck. :) So glad you enjoyed it!
